Overall I found the FSPCA Preventive Controls for Human Foods course very thorough. The instructor portion of the course led by Maxime Ndayizeye really tied all the concepts together in a practical way. For example while completing a mock process control exercise Maxime was able to clarify at what point in a process a hazard requires a process control. I came into the course with some experience in preventative controls and left feeling confident applying the course content at my current quality assurance position.
